Why choose Hagane Blade?

Traceable steel

Traceable steel

Damascus blade with a VG10 core, 60-62 HRC. Steel composition and origin are stated on every product page.

An edge that lasts

An edge that lasts

At 60-62 HRC, the blade holds its edge longer than standard Western steel at 56-58 HRC.

Hand-finished

Hand-finished

Each blade is hand-sharpened in several stages. Handle weight and balance are designed for daily kitchen use.

Why Damascus steel?

Hagane Blade knives are forged from 67-layer Damascus steel with a VG-10 core, hardened to 60-62 HRC. The layered construction is created by folding and pressing the steel repeatedly during forging, producing the wave pattern visible on every blade.

The exact steel composition and HRC rating are listed on every product page no vague claims about the metal you're buying.

An edge built to last

Each blade is sharpened to 15 degrees per side, compared with 20-25 degrees on most Western knives. This finer angle gives a cleaner, more precise cut.

At 60-62 HRC, the edge also holds significantly longer than standard stainless steel, so it needs sharpening far less often even with regular daily use.

Japanese Knife Experts Since 2013

Our Story

We started in 2013 with a single obsession — bringing genuine Japanese blade craftsmanship to home cooks and professionals across the UK.

Every knife we carry is selected for its steel quality, edge geometry and handle balance. Nothing makes it into our collection unless we would use it ourselves.

Over ten years and thousands of customers later, that standard has never changed.

Completely changed how I cook

I've been cooking seriously at home for about six years, always with decent European knives. Got the 8-piece set as a birthday present to myself and the difference is genuinely shocking. The blade holds its edge far longer than anything I've used before. Prep time is down, food looks better, and honestly I enjoy cooking more now. Worth every penny.

The perfect gift — he was speechless

Bought the chef's knife set as a Christmas gift for my husband who has been cooking Japanese food at home for years. The packaging alone made it feel like a premium purchase. He says it's the best tool he's ever had in the kitchen — the balance is perfect and the sharpness is unlike anything from the high street. Fast delivery, beautifully presented.

Professional quality, accessible price

I work as a sous chef and have been using Japanese knives for eight years. Picked up the Gyuto for home use and it performs on par with blades I've used in professional kitchens costing three times as much. The Damascus pattern is beautiful, the edge retention is excellent, and the handle sits perfectly in the hand. Highly recommend to anyone serious about cooking.

Finally invested properly — no regrets

I kept putting off spending properly on a good knife. After years with supermarket sets, I decided to go for it and ordered the Santoku. The moment I used it for the first time I understood what I had been missing. Vegetables, fish, meat — everything feels effortless. The 30-day return policy made the decision easy. I won't be needing to use it.

Obsessed with the craftsmanship

I collect Japanese kitchen knives — currently have 14 in the collection. The Damascus blade on this one is genuinely one of the most visually striking I own. The wave pattern is clean, the handle is solid and beautifully finished, and the cutting performance matches the aesthetics. This is the kind of knife you display and use with pride. Outstanding.

A knife for every task

Hagane Blade offers several blade shapes, each built for a specific job in the kitchen rather than one knife trying to do everything.

Gyuto

A Western-style chef's knife shape in Damascus steel. Suited to everyday prep slicing, dicing and mincing.

Kiritsuke

A traditional Japanese shape combining a slicing tip with a flatter edge for chopping, used by cooks who want one blade to handle both.

Cleaver

A full-tang blade for heavier cutting breaking down poultry or cutting through bone, alongside standard vegetable prep.

Buying as a set

Sets cover more tasks at once and cost less than buying each knife separately. The Nagoya Collection (7 pieces) starts from £88.50, and the Daichi VG10 Damascus set starts from £93.75 for a 2-piece option.

For serious home cooks, the Matsu Collection is an 8-piece Damascus VG10 set built as a complete kitchen kit.
