The Hagane Blades Kiritsuke is built for chefs who want a single blade that slices, chops and carves with equal precision — forged from 66 layers of Damascus steel, sharpened using the classical Japanese Honbazuke method, and finished to a razor edge that holds.
- Honbazuke hand-sharpened in 3 stages — each blade is individually sharpened and polished by experienced craftsmen using the classical Japanese Honbazuke method, producing a cutting edge at 8–12 degrees per side that no machine finish can replicate.
- 62 HRC hardness — rust and wear resistant — VG10 stainless steel core with 66 layers of Damascus cladding delivers a blade rated at 62 HRC, with exceptional resistance to rust, dulling and daily wear even after prolonged use.
- Three cutting styles in one blade — the double-beveled edge and lightweight design handle rock chopping, push cutting and pull cutting with equal ease, making it as versatile as a Gyuto without sacrificing the precision of a specialist blade.
- Octagonal carbon fibre and wood handle — chemically stabilised wood combined with carbon fibre creates a handle that is heat, cold and moisture resistant, with an octagonal profile that locks naturally into a proper pinch grip.

All HAGANE Blade knives are covered by a 2-year warranty against manufacturing defects including blade integrity, handle attachment and material faults.

The warranty does not cover damage resulting from misuse including dishwasher use, cutting on hard surfaces (bone, frozen food, ceramic boards) or incorrect sharpening tools.
